It's My Birthday... and Purim!

As my birthday merges with the best of holidays - Purim ✨, I've decided to celebrate by sharing my favorite recipe for the most delicious holiday treat: Hamantaschen!

This is the yummy result:

And here is how to get there:
Ingredients (for 40-50 cookies. Great for a Purim party!):
  • 7 cups flour
  • 1.5 cups powdered sugar
  • 400 grams butter (room temperature)
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons lemon juice
  • Fillings of your choice. Anything sweet will work. My family's favorites are Nutella, white chocolate spread and speculoos (such as Lotus) spread, but you can go wild here!
Instructions:
  1. Preheat the oven to 160°C/ 320°F.
  2. Mix the flour, powdered sugar and butter until a fine crumbly texture forms.
  3. Add the eggs, vanilla extract and lemon juice, and process or mix until the dough is smooth.
  4. Shape the dough into a ball, wrap in cling film and refrigerate for a minimum of 1 hour (overnight is fine, too).
  5. Turn dough out onto a lightly floured surface and roll out into a thin layer, about 3-4 mm/ 1/8 inch.
  6. Cut out circles with a cookie cutter or the rim of a glass, about 7-8 cm/ 3 inch in diameter.
  7. Fill the center of each cookie with a spoonful (not too much, or the cookies will open when baked) of the filling(s) of your choice. Now comes the tricky part: raise the edges of the circle to form a triangle, and pinch it together, gently but firmly.

  8. Bake for 8-9 minutes until the cookies are lightly golden and look stable (keep baking a little longer if they aren't yet), then take them out and cool.
